SPRING ROLLS

Ingredients:
5 green onions chopped
1 cu thin noodles, pre-cooked
1/4 cup fresh herbs (cilantro, basil, mint)
1/4 cup carrots
1 tbsp soy sauce
1/2 tsp fresh ginger, grated

Directions: Toss ingredients together in large bowl. Dip spring roll wrappers in hot water until soft. Place about 2 tablespoon of mixture on wrapper and wrap spring roll. Serve with dipping sauce.

                                DIPPING SAUCE

Ingredients:
4 teaspoon fish sauce
1/4 cup water
2 tablespoon fresh lime juice
1 clove garlic, minced 2 teaspoons garlic chili powder
2 tablespoons white sugar
1/2 teaspoons chili sauce
1 teaspoon finely chopped peanuts

Directions: 
Mix all ingredients together in bowel.

EDAMAME DUMPLINGS

Ingredients:

  • 1 tsp salt
  • 1/4 cup water
  • 2 tsp mirin
  • 2 tspn sesame seed oil
  • 3 table spoon butter
  • 2 tbsp rice vinegar
  • 2 teaspoon grated ginger
  • 2 cup edamame
  • 1 package round dumplings
  • Bok choy leaves
Ginger Soy Sauce: 

  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup sliced green onion
  • 1 teaspoon grated ginger
  • 1 teaspoon Asian Chili Paste
Directions:
Boil edamame for approx 5 minutes, strain.  Puree the edamame, ginger, rice vinegar, mirin, sesame seed oil, butter, water and salt.

Lay dumpling wrappers on plate and spoon edamame in center, seal with water to make "cresent moon" and then fold top to make "Pea in Pod"

Place water at bottom of pan for bamboo steamer. Line bottom of steamer with bok choy.

Make dipping sauce by combining the sauce ingredients

Place the prepared steamer in wok and bring to boil.  Cook until dumplings are see through. Turn off heat and let rest for a few minutes. Transfer to plate and enjoy.

ASIAN STYLED MEATBALLS

Ingredients:

  • 1 lb ground turkey
  • 2 scallions, very finely chopped
  • 1/2 cup finely chopped cilantro
  • 1 tablespoon vegetable oil
  • 2 tablespoon soy sauce
  • 1/2 cup fine, dry bread crumbs.
  • 1 egg, lightly beaten
Dipping Sauce:

  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 2 slices of ginger
Directions:

Heat oven to 400 degrees F. Mix all ingredients together. Arrange on a lightly oiled cookie sheet and bake for 29 minutes until golden brown and cooked through. Serve with toothpicks for dipping.

To make the dipping sauce, stir all ingredients together in pot over medium - low heat until the sugar dissolves.  Simmer 3 minutes stirring frequently, until the sauce thickens. Serve in cup.
